It takes approximately 40 litres of sap to make one litre of maple syrup. That’s a lot of boiling! To help reduce the time and energy required to boil down our sap, we have two Reverse Osmosis machines, which filter out about 75-80% of the water before the sap enters the evaporator.
In 2009 we also installed a Steam Away Pan, which fits on top of our front pan of the evaporator. This Steam Away Pan uses the steam from the boiling sap below to preheat the cold sap from the RO. This way, instead of the sap being cold when it enters the back pan of the evaporator and requiring lots of energy to heat up to a boil, it’s ready to boil right away!
Our RO Machines and the Steam Away Pan both greatly reduce the amount of oil we need for our boiler.
To help us in going green, we would like to ask our customers to please bring their own cloth bags to bring their syrup home with them. Syrup is pretty heavy, so cloth bags work better anyways.
